ALSTIG INC builds six apps for independent restaurants. This is the other half of the company: Ben Mouton working on your numbers directly, for the problems software cannot close on its own.

Fourteen years owning two restaurants in this metro. Thirty five years in the industry, starting at a dish pit in Bastrop at fifteen.

Published, not quoted

The going rate is $150 to $350 an hour. Almost nobody prints it.

Monthly retainers in this trade run $1,500 to $5,000. You will not find those numbers on most consultants' sites, because the number arrives after a discovery call, once someone has sized up what you can pay.

Ours sit at the bottom of that band and they are printed below. If the rate does not work for your room, you have learned that in ten seconds instead of two meetings.

Menu pricing and plate cost

Costing every plate, then pricing it against what your regulars actually order. Food cost is a result. The menu is the lever.

Food and labor cost control

I held prime cost at 62% in a full service room with a bar, inside the 60 to 65 band that decides whether an independent makes it. I know what the last three points cost in cash, and where they hide: ordering, schedules, waste, and the weekly numbers that catch drift before the month closes.

Openings and turnarounds

Pre opening systems, permits, and inspection readiness. For a room already open and bleeding, triage in the order that stops the bleeding fastest.

Systems and POS

I programmed POS systems for a living before I owned rooms, then ran them in my own for fourteen years. Implementation, reporting you will actually read, and an honest read on whether a piece of software earns its subscription.

Vendor and supply negotiation

Your distributor pricing, terms, and delivery windows read against your real volume, then pushed. Most independents are paying list on items with a match available.

TABC and health compliance

Inspection readiness built into the daily routine rather than crammed the night before a visit. Same for alcohol service and the training behind it.

2012
Mouton's Southern Bistro, Leander
I bought a failing breakfast house at the end of 2011 and rebranded it on my 37th birthday. Day one at the old room produced a staff walkout, and I ran Sunday brunch with one cook.
2018
Mouton's Bistro & Bar, Cedar Park
A second room, open thirty days after I signed, in a space a failed Cajun concept had been locked out of. I negotiated the equipment lease buyout to get in.
2024
Consolidated to one unit
I closed the Leander room in 2024 after a twelve year run and moved everything behind Cedar Park. Deciding to close a room, and doing it without wrecking the crew or the cash, is its own piece of work.
2026
Sold Cedar Park, kept building
The asset sale closed March 31, 2026. The same company that owned the restaurants now builds the apps. The consulting is the same work, now in other people's rooms.

How it goes

Three steps, and the first one is free.

1. The call

Thirty minutes. You describe the problem. I say whether it is something I have actually fixed before, and if it is not, I say that too.

2. The first session

Usually on site. I want your P&L, your invoices, your schedule, and a walk through the kitchen during service if the timing works.

3. Written, then yours

You get the findings written down with the numbers behind them, in the order I would fix them. You can run it yourself from there, or keep me on monthly.

What this is not

Not a franchise playbook, not a concept deck, not a brand refresh. If a chain operator with an in house ops team calls, I will tell them they are paying for something they already have.

No client case studies. This practice opened after the Cedar Park sale closed in March 2026, so the track record on this page is my own fourteen years and my own P&L. If a consultant your size is showing you fifty client wins after six months, ask which ones you can call.

What you can check: the timeline is dated and specific, both rooms were real and are on public record in Leander and Cedar Park, and the rates above do not move based on what your building looks like.

Questions owners actually ask

Straight answers.

Why is a software company selling consulting hours?+
The apps handle costing, reviews, invoice checks, and recipe scaling for the price of a subscription. They still cannot walk your line on a Friday and tell you the schedule is the problem, not the food cost. That part is a person, and there is one of me, so the hours are limited on purpose.
Do I have to buy the apps to hire you?+
No. The consulting stands alone and the invoice never has an app subscription hidden in it. If one of the six would save you the money you are about to spend on my hours, I will say so on the free call.
What size room is this for?+
Independents and small groups. One room to a handful. That is what I ran and that is where the advice is worth what it costs.
Remote, or on site only?+
Both, at the same rate. Menu costing and P&L review work fine over a screen share. Openings, turnarounds, and anything where I need to watch service want me in the building.
What if you are not the right fit?+
Then I say so on the free call and it costs you half an hour. I would rather turn down the work than take a retainer for a problem I have not solved before.
